I haven't watch anything on USA or Sci-Fi for years (since I only had the SD channels). Now that E* added the HD version of those channels I was wondering if there is any true-HD shows worth watching. Any recommendation?

In terms of true HD programs, the only one on those channels I watch is Monk (all the ones starting with S06 E10 are in HD, and some earlier ones are presented in HD, while other older eps are not).
Well crafted disposable entertainment, and family-friendly.
I also have watched Doctor Who for over 30 years, and the current episodes are very good, and are presented in OAR and better-than-usual-SD quality on SciFi-HD. (The producers of Doctor Who refuse to film in HD, for reasons not particularly relevant to this thread.)

I enjoyed the first season of Burn Notice on USA. They just started replaying it leading up to the second season, so I am recording to rewatch in HD. Also enjoy Stargate and Galactica on SciFi. I get Dr. Who early as I didn't care to wait for the US broadcast to begin.

SciFi does not have the rights to show it in HD yet. HdNet does.
