Had to google it. Looks like self abuse, to me. I thought green chiles were supposed to be milder. I gather not.

Dfergie,
Do you know of any local grower in your area that will freeze and ship them without charging an arm and a leg? Those are my favorite chiles and I can only get them when my friend visits family in NM.

navy, if they are too hot you just reduce the amount you use in your food... :) Don't know on that Sky, I got mine from a local grocer and paid $19.98 for the bushel roasted (same price at Wally World) I see advertisements on the "local"channels from Albuquerque for the same price plus $5 to roast them...

There's a few websites that sell them, but they're pretty pricey...Here's one:
- newmexicanconnection.com | SHOP ONLINE (http://www.newmexicanconnection.com/catalog/)
$80 for 10 lbs......I realize they have to package them and keep them cold en route, but that still seems a little high to me.

I've got a whole bag of assorted peppers at home. The neighbor brought them over from his garden. I'll take a picture of them when I get home and maybe some of your Pepper Afficianado's can help me decide what to do with them all. I don't even know what kind of peppers half of these are....

Ok folks, I took a picture of my peppers. Any suggestions on how to use them? Besides stuffed peppers, I'm running out of ideas....

The top ones on the right look like serranos. They are warm/hot. The others up top could be jalapenos. They are warm to hot. The middle ones look like Pasilla/Poblano. They make excellent chile rellenos (stuffed chiles). They are fairly mild. Not sure what the bottom ones are.

I think I can nail these with my 10 years of grocery experience:
Top right: serranos - I'd roast & peel them and then mash them into a grilled steak.
Top left: Poblano - either rellenos or stuff it with hot italian sausage
Middle: Cubanelle - its a sweet pepper that is slightly less bitter than a green bell pepper.
Bottom: Jalapeno - Can be extremely hot when eaten raw. I roast and peel them and use them as a topping for tacos. If you have tomatoes, onions, & herbs you can add them raw (sparingly) to make a good homemade salsa.

Very nice. We're heading down to NM in Sept. We'll be picking up our chiles then, and we need a new ristra, the wind has torn ours apart.
Just ate at Little Anitas in Denver yesterday, and the chilis in their green chile were FRESH!, and had that fresh roasted flavor, YUM!

If you can find a copy of Chile Pepper magazine, they usually have ads for shipping chiles.

I can't believe it, my local Safeway has Hatch chilies on sale! :up The fact that they even have them at all is amazing.

Ended up with 3 gallon freezer bags with 6-7 quart bags full plus 1 quart bag, I'm worried that might not be enough (had 1 gallon bag left from last year plus a couple of quart bags)...

Mine is kinda full also. So you split a bushel? or you split a half bushel?
Trying to figure out how much to buy this year.....
Thanks!

I believe it was a bushel and they were already roasted, I thought about a roadside guy that had a horse trailer setup full of chiles,(got some from him in the past) but had good luck last year with the ones I got at La Tienda a local grocery so went that route again... I might check & make sure I don't have some Ice ratholed in the bottom of the freezer that I can do without. (different compartment from where I usually keep the chiles) ;)

Central Market (a grocery store here in Texas) has their "Hatch Chile Festival" every year at the end of August. They setup a couple of roasters at each store and they sell tens of thousands of pounds. Unfortunately, they have only sold the green ones the last couple of years. I'm partial to the red hatch chiles.
I think they even have a contest (with themselves) to see if they can make more ridiculous items with the chiles than they did the year before. Of course, you can get burritos, tamales, queso and sausage...but they also make crazy stuff like Hatch Chile Sourdough, scones and mozzarella.

No way, but fresh Hatch chilies in California are a rarity. I usually get 'em canned from Trader Joe's.

Worried... I diced one up and scrambled with 3 eggs for breakfast, no heat... will have to make some tacos this evening with some to further investigate. (they were marked medium hot)

There is heat... I made a batch of burritos with 3 diced Chiles along with a diced Bell Pepper, Onion, grated Potato & 1 lb of lean Ground Beef... more like medium heat, but livable...
Bobby
09-01-2010, 04:57 PM
Well, medium is better than none! I actually like 'em a bit medium, too hot makes the food flavor go away for me.

I diced one and put in a bowl with a slice of margarine for :15 seconds in the microwave then added 2 eggs and a diced slice of cheddar cheese with a dash of milk... has heat ;)
