how come on the hdtv setup on the 722k it does not have 1080p?

Cause it (like all other cable/sat boxes) doesn't do 1080p as far as normal channels.
There are a (limited/few) number of VOD movies that are done at 1080p, but not normal broadcasts.Dish Eastern Arc: 722/622/612 with AT250/HD + Wash DC Locals Sat & OTA via CM4228
