I got to get me one of these things sometime. I have one of those cheap small smokers and am about ready to go bigger.
 
The Plan

1- 5 lb Chicken
1- Pork Spare Rib rack

Brined the Chicken for about 1.5 hours in sea salt with a little of my rub and apple cider vinegar
Rubbed the ribs with my rub at same time
Applied more rub to both & put in cooker, crisscrossed 2 strips bacon over the chicken & 1 over the ribs

Drip Pan- Coors Extra Gold Lager

The Plan

4 lb Chicken Wings
4 lb Breaded Blazing Chicken Breast Fritters

Applied rub liberally to the wings, placed fritters on bottom and middle rack with wings on middle & top rack.

I loved smoked meats. My brother cooks a lot that way. We found the same thing. Sometimes the smoke flavor is overpowering. So, we start off with Oak or something with less pungent smell and then add hickory or other woods later.

I think I'll have to do further testing this summer :)
