With thousands or millions (it seems) of people leaving E* for D*, especially now that it is official that AMC-14 is dead, won't that start to mess with D*'s bandwidth capacity? Could E* actually gain capacity with losing so many subscribers?

No, as capacity is not determined by the amount of subscribers but the amount of channels.
The signal reaches everywhere, so anyone can pick up the signal and get the channels off of it, but there are only so many channels that the bird can handle.
