I am not sure you can encrypt an iPhone but I know that Android can be encrypted right from the OS itself.

How? I have gingerbread and was looking for this and I can't find the enabled button or choice.
 
I do see that option on my new ICS Evo 4G LTE

Not sure I want to, however, as once you do it, you can't undo it.

I found the option to encrypt 2 out of the 3 storage locations on the EVO LTE.

This applies to iPhone 3GS, iPod 3G, and all iPad (and newer models of each)

There are rumors that it is not encrypting the entire hard drive but certain directories. Some claim to have connected an iOS device to Ubuntu and was able to see most of the hard disk unencrypted.
