Sunday gravy. Hot Italian sausage, country ribs and meatballs slow simmered in a flavorful tomato sauce. Fresh made Ravioli (not by me), garlic bread and Caesar salad. Red wine.
Tacopilla. Seasoned ground beef, refried beans, cheese, lettuce, tomato, sour cream, guacamole on a sopapilla served with red and green chile sauce. Iced tea.
Beautiful 1" thick bone in center cut pork chops from the butcher, seasoned salt and pepper on a charcoal fire, cooked to 150 degrees internal. Baked spuds over the coals, vegetable medley and salad. IPA.
Navajo taco. Indian fry bread, seasoned ground beef, Anasazi beans and shredded cheddar cheese. Smothered in red and green chile sauce and garnished with diced onion, lettuce and tomato. Iced tea.
It was a rough week at work. Today I got home and lit a nice lump charcoal fire. Whipped up some some hamburgers from a pound and a half of 80/20 chuck that I picked up from the butcher. Made some green chile cheeseburgers with all the fixins, rosemary oven fries, spinach and cranberry salad...
