    The BEST coax to use would be RG-11, however price and availability likely make it a prohibitive choice. You'd probably do well with some of the old 4 leg ribbon cable. Two RG-56 runs combined with a 4 wire motor control run plus a polar rotor run which you wouldn't need.

    Just curious, are you measuring the focal length to the scalar or to the feed-horn? If the scalar is at the proper(by calculated value) length, wouldn't the feed-horn, set at an f/d ratio of .3579 put the feed-horn about where it is now?

    I`m glad the quick and easy worked for you. The get dead on level, you may need to back off one or more bolts and tighten the opposite bolt. It does depend on the bolt pattern of your mount which adjustments are available and necessary, but a little patience will work wonders.;)

    As to a 6 foot dish, with 3 1/2 inch mount, installed on a 2 1/2 inch O.D. pipe, provided that the pipe is at least schedule 40 thickness, you'll find the easiest solution is to simply use longer bolts through the mount.
