There is not any standard numbers in use. Up until this point, Dish has used a different scale on different receivers, making comparisons difficult.
Coincidentally, right now, Dish is changing all the receivers to a standard scale of signal strength numbers that will be more useful.
To answer the original question, Dish 500 gives more gain on 110 and 119 than Dish 1000, the latter adds a third location at the expense of a slight decrease in 110 and 119.
You don't mention your location which is the crucial factor for both 129 and 61.5 . Generally, if you can get a clear sight of the 61.5 satellite, it gives you a better signal strength than 129. But, Dish considers 129 the standard location for HD, although so far, all HD channels are mirrored on 61.5 .
If you are in the NorthWest, then a 24-inch dish for 129 is recommended, and a 30-inch dish is ideal (the Winegard DS-2077 30-inch can be purchased for around $50, and is the same brand who makes dishes for Dish Network).
Elsewhere, a second Dish-500 for 129 or 61.5 is an ideal solution, because you can get a Dish-500 on ebay for very little $$.
