If I upgrade our VIP722 to a Hopper, will I be able to play the movies that are on our external USB hard drive (recorded using the VIP722)?

You will not have any problems with that change. Sometimes the Hopper can take 24 hours before it will start to read the external drive.

The Hopper can support 2 ehd's at a time.

Best they held powered EHDs or go thru a powered hub. I've had multiple EHDs connected via a powered hub and only powered up the ones I wanted at that time.
