I only have an HDMI cable running from my tv to the sound bar. No other cables used and everything works with Dish and Roku remotes including sound, mute, and turning tv and sound bar on and off with one button.

What brand of tv do you have? I have a Samsung tv and a Yamaha sound bar and I am using theARC setup. My Dish and Roku remote both control sound on all imputs. If your Roku remote controls the tv sound, it should control the sound bar, since it is the tv and not the remote controlling the sound...

Readings Just checked my numbers. 129 - 41to 52, 110 46 to 53, 119 71 to 81. Which way should I adjust my dish to max these numbers?

adjusted the dish and am now getting the channels. Readings are as follows 119-19=43, 110-16=54, 129-21=33. Do i need to rotate the dish some more?
