So been playing with my pellet grill and have made some really good food. Been wanting to make some bacon but pork bellies are not cheap. Whent to Food Lion today and 5 to 6 pounders were two days to expired sell by for chap. A 6 pounder was $16 bucks, now proud to say 24 pounds Of bacon curing in the fridge waiting for smoke next weekend. Two normal. one maple and one candied.

How did it come out?
I have a pork butt curing to try buckboard bacon, put in fridge today, looking at 10 days, flipping daily.

Ended up with 2 pork butts, cured 10 days, rinsed and soaked for 45 minutes yesterday, dried off and let sit on rack for 16 hours. (50% Himalayan coarse pink salt, 50% Brown Sugar)
Smoked in Oklahoma Joe (hickory) for 3 hours till internal temps were 159 & 156.
Chilled in freezer for 15 minutes and wrapped with saran wrap, back in fridge till tomorrow morning's test.
