I have received my Hopper 3 today and I totally love it. I do have a question though, it always shows Tuner 1 as "Guide Update" on the TV Activity. Will this always be like this?

No, it will not always be like that. Occasionally a spare tuner is used to download guide updates, but its not something you'll see all the time.
Also note that new Hoppers can do some strange things for the first couple days until everything gets downloaded and they settle in...so you may see other oddities happen for a couple days.
