    The Orion is in use today; smoking up 3 chickens. The Weber is doing duty too, with 3 large pieces of pork. Smells abound. Life is good.

    Haven't cooked with my Orion since before my house smoked... I have a 4.5 lb pork roast in Apple Cider vinegar for a cook tomorrow, also have a beef rib rack I'm going to put rub on this afternoon for same cook.

    Rib Rack
    Ignition: 11:35
    (real start closer to 12:30 due to poor quality lump charcoal)
    Poured some of the Apple Cider vinegar into drip pan
    Mesquite Chips
    Pulled at 3:35 @ 197 f
    letting sit in oven for a little while...

    Butt roast, baby back ribs. Sliced the meat off the ribs & stashed for lunch at work.

    Smoked a batch of Jerky Saturday
    Mesquite Chips, no liquid in drip pan, cooked 1:15.
    Really good smoke taste & flavor.

    Hickory Chips, no water, cooked 1:05
    Good taste as well

    Smoked salmon fillets on bottom rack with bacon & brown sugar on top.
    Jerky on the upper racks.
    Cooked 1:05
    Hickory with a few mesquite chips.
