is there any way on the joey 4 to pick and choose what resolutions you want and don't want 🤔. it would be nice to turn off some of the lower resolutions if one can🤔

Even the hopper choses 2160P even though it 's set for 3 resolutions
??? My Hopper 3 is set for the 3 resolutions. If I am watching regular channels it is outputting 1080i. The 4K channels are outputting 2160p. There are some movies available in 1080p and the Hopper outputs those in 1080p. The Hopper 3 is outputting the proper resolutions for what they are supposed to be. The Joey 4 outputs only 2160p even if the program is 1080i or 1080p just like the other streaming devices.

On both of my Hopper 3 receivers you can set the video resolution under TV settings.
The 4 choices are:
480i
480p
720p
4K, 1080p, or 1080i

If you select 4K, 1080p, or 1080i your Hopper3 will automatically pick the correct resolution based on the content as Bobby has said.

I don't own a Hopper Plus so I don't know how it handles resolution based on content.

Joey 3 clients can not do 4K but you can set the video resolution under TV settings.
The 4 choices are:
480i
480p
720p
1080p or 1080i

Mine doesn't.
1080i output unless watching 1080p content, (hardly ever... mostly on demand) or 4K productions. In those cases the output matches the content.
