I recently added hd service to dish. My problem is that on some channels the picture seems steched in the vertical; people appear too tall and slender, especially on espn football. Anyone else have this problem? Any suggestions as to how to fix this problem?

Make sure both your Dish receiver and TV's displays are set to 16x9 and that neither are using any zoom/aspect ratio change settings.

I have tried aspect ratio changes with tv and vip722. 722 set to normal and tv to full. Panasonic 5075u plasma. Any other suggestions?

No. Receiver needs to be 16x9. TV needs to be 16x9. Go into menu settings for both (not function of zoom buttons). On Dish receiver, it's Menu, 6, HDTV setup... NO ZOOM on either. One or both is set incorrectly.
