I thought I would start this thread for people to post their favorite receipe/meal that you enjoy cooking/eating.

Rotel

needed 1/4 to 1/3 milk
2 lb block of mild Velvetta Mexican Cheese
2 lb block of regular Velvetta cheese
1 lb of mild sausage
1 28 oz can of original Rotel
3 bags of white (or yellow) corn chips

Take a crock pot, put in the milk, cut up both blocks of cheese and melt, stir while melting. Do not set crock pot on high, will burn cheese.
Brown the sausage, drain and wash it in HOT water to get the grease off of it.
Pour the Rotel into the strainer to drain the juices (NO washing)
Once cheese is melted stir sausage and Rotel mix into the cheese
Finally once melted enough to serve, grab the bag of chips and dip or pour the dip on top of the chips.

Great for parties or to have something to snack on for a few days.

HERE TO HELP YOU!
Tried this a couple of weeks ago in a mini-crock pot ,
a small pork roast
surrounded by pre-soaked pinto beans(filled in the empty space left in pot)
water to top of crock pot
3 green chiles (diced)
cooked 12 hours on low
excellent burrito material...
