iTunes Constantly Rearranges my APPs

The other issue with the latest iTunes update is it screws up my folders and groupings on my devices. I cannot sync or iTunes will regroup my APPs the way it wants it laid out in iTunes (a way I did not organize them).

Here is my phone:

Here is how iTunes will organize it if I sync it. Before I updated iTunes the APPs were arranged exactly as they currently are on the phone. I do not have time to move APPs and regroup them. Can I get iTunes to group like it currently is on the phone without moving everything myself?

After rearranging the APPs within iTunes, the way I want them and syncing my phone. When I went back to sync again, iTunes then rearranged it the way it appears in the second photo. It will not allow me to arrange my APPs the way I want to. Everytime I regroup they APPs in iTunes or on the phone and sync, imediately after the sync iTunes resets it back
 
Can't help as I have never had this issue on any of my iOS devices. I wonder if it might have something to do with the jailbrake?
 
Do Not Update iTunes. It is full of errors

Does anyone know how I can revert back to the previous version of iTunes. This latest update is full of all kinds of errors. It's screwing up all of my devices by removing songs that are not supposed to be removed and rearranging my APPs after I arranged them 2 different times. Since music match is worthless (you have to pay to use it), there is no point is using this this version, 10.5.1.42.

It is doing the same thing to my wife's phone and her's is not JB. Plus I have never had this issue.

Are you running the latest version that just came out today?

Yes I am using the one from today. I am in the middle of matching all of my music right now. I went through the match process once and many of my songs had errors. I also downloaded newer versions that were higher bit rate for all the ones that I could already.
 
Doing some research I found that people get this issue with iTunes every now and then. It is a "bug" [their word] that somehow gets downloaded during the installation process, which explains why I am only having this issue on one of my computers. Now I have to figure out how to get rid of it
