Several older versions of ITunes allowed you to organize the various app screens in iTunes using the much larger screen size of your computer. They even allowed you to move whole screens or pages of apps more easily than you can do on the device itself. The recent updates seem to have eliminated this in favor of facilitating the use of folders as you finf in iOS 4.x.

Does anyone know if there is still a way to change the existing screens through iTunes or a good way to downgrade (even temporarily) the iTunes software to allow this.

Not talking about hacking here. Just trying to find out if there is an easy way to regain this apparently lost functionality without upgrading the phone OS and going to folders.

You can still do this. When you connect your phone with iTunes, click on the phone. In the phone section you will see a tab called, Apps.
