DISH gave me the hard sell not to cancel

That works. I used it myself to avoid the BS. But, in retrospect, I think I did the wrong thing. I should have said why.

I think everybody that cancels should tell them why, or they will continue to keep doing what they're doing. The crappy HW, poorly trained CSR's, missing programming, etc, will continue.

Tell them you're leaving to get an HD DVR that works, one that is available to existing subs, one that has two OTA tuners, and/or one that gives you local OTA guide info without having to subscribe to dbs locals.

Tell them you want to watch YES, Oxygen, Logo, NFL Network, Local Sports in HD or whatever channels you find compelling that Charlie doesn't.

Tell them you are tired of playing CSR roullette.

Tell them the true reasons you are leaving! Of course, it may very well be that you are moving to a place with no LOS, and will miss Dish dearly. Tell them, if that's the case.
