Everyone that mentioned swapping the Joey for a second Hopper is brilliant. That's exactly what I would do and should solve all your problems. You'd have your separate hard drives and tuners but could still share them if your really wanted to. Nothing else that Dish has compares to what two Hoppers can do for you.
