After watching a recorded NFL game when I went to delete the recording and a rather long list of games appeared(including the game I was deleting) saying available on demand. I went into on demand menu but I'm not sure where to look to find them. I tried several locations (NFL, FOX) but didn't see any games. I'm sure I'm just missing something obvious.

Did you click on one of the on demand games in the list? That's the best way to get to them. Did you do a search in the on demand?
I find that if I have a list of episodes recorded, the on demand will fill in missing episodes if I wish to watch them.
I was even able to watch episode 1 of a series before it was aired because they aired episode 2 first and episode 1 was in the on demand list after episode 2 played.
