Wouldn't it work if he just matched up the colors on both ends? Red to red, green to white, blue to yellow?

Yes. You can safely match the yellow, red, and white of the Joey to the yellow, red, and white of the TV using a blue, green, and red component cable. I've done that often in the past, as well as using yellow, red, and white composite cables for blue, green, and red component connections on devices.
 
For those needing long HDMI runs, you can convert to Cat6 cable with something like this:

A friend is using one and he says it works great.

Both of these are passive and take two CAT 5e or 6 runs. There are more expensive units that use a single cable but the one I stumbled across requires power at both ends:
