Record/Generic cable/Roku tv/Simplistic Please

I dropped dish (price), and am going to use a generic cable supplied by the park (interesting enough-it's supplied thru dish). However, it does not come with box or remote or quide. Hence the cheap price. CAN I RECORD SOME HOW? Is there a dvr or box or both that I can buy to record my shows? I am NOT tech savy! Need something simple, not to expensive (don't want to have to pay for subscriptions) and easy to put together (hook up). Is there such a thing? Where? Best Buy is a no go. They only had 1 recorder (OTA) in the whole store, and tech didn't know anything about recording cable. Streaming is also a no go. In order to get (abc, cbs, and nbc) I would have to pay as much as I did for cable. Any and all help greatly appreciated!
