Does Shaw's satellites still hit in Arizona, specifically around Phoenix? I haven't put one of these systems in for a good while and am wondering if there is still coverage here.

Absolutely! I have a 75cm dish running right now in San Tan Valley.

You should be fine getting signal from Anik F1 and F2 (which have footprint as down south as Central America), however you´re too south for Anik G1 which now carries a bunch of new HD channels.
