Scenerio: Hotel built 5 years ago. Need to replace 2 cables on third floor (So far that is all). Original runway not accessible. Due to direction cable must be run to get from third floor to first floor server room the length is 345 feet.

What type of Signal Amplifier should I use for two (2) Rooms Back-to-Back?

First invest in a signal strength meter so you can measure the signal you are distributing. Second learn about using TAPS.
Third start reading all that you can on distribution systems.
 
I was brought in after the fact on this job. 24 receivers, 175 rooms. The original installer left without finishing the job and I normally do not do hotel/motels.

Telling me to invest in extra equipment at this point is useless. I merely need to know what type of signal amplifier should be used.

Not trying to be rude but if your response in not an answer to the problem please do not respond.
