Surf 'n' Turf Tailgate - Any Favorites ??

Well, we're on the cusp of our annual "bigger is better" tailgate this weekend. From my "Breakfast Fajitas" thread you might recall I work at these games, and early kick-offs leave little tailgating time. (We've now had 3 noon starts in a row!) Night games are just the opposite !!

We've been doing this S 'n' T thing for the past several years featuring strip steaks with mushrooms and onions, king crab legs (preferred by our group vs. "lobster" tails), steamed clams, shrimp, mussels, etc., scallops sauteed in butter...whatever! The sides were typically baked potatos with all the fixin's, corn in the steamer, and something "exotic". I use my hand-crank blender to turn out some kind of frozen drinks as well. We have a lot of time for a late start tailgate like this and we tend to make the most of it, both cooking and gorging!

This year I'm thinking of grilling the shrimp, perhaps with a teriyaki sauce, and/or wrapping them in bacon and slathering BBQ sauce on them. I might also grille portabellas and shiitakes. If I can get big enough scallops I might bacon wrap them as well.

Any other ideas ??

Mmmmm - can't wait !!

(PS - We decided to table the fajitas until we have more time to enjoy them. "Breakfasts" lately have been mostly liquid...!)
 
Clams, mussels and shrimp are all pretty easy to do.

If you're going the seafood rout, salmon and Ahi Tuna are also pretty easy to grill too. You could slice those up and create a nice appetizer with them.

I've seen those in a restaruant somewhere, probably in San Francisco. Not available locally. I was half seriously thinking about them however, until I read the aphrodisiac part - very bad idea with this crowd...on several accounts...! (VERY bad...!!)

I like HD MN's idea - just added tuna steak to the list. If I can't get that, I'll switch to swordfish. Will marinade it first in teriyaki...
 
Go with some grilled beer-shrimp fajitas.

Just thaw out some frozen tail-off shrimp, marinate them in beer (Corona or similar), fresh cilantro, 2 2tbls vegetable oil, 4 tsp worchestershire, 1 clove minced garlic, and a minced jalepeno (hot sauce to taste if you don't want to mince the pepper)....

Throw it in one of them grill woks (much cheaper than that, I can assure you)

serve the final mixture on a flour tortilla with some queso fresco, onions and cilantro, lettuce and tomato and you are all set...

its delicious...
 
vampz26 - That's a great idea as a main course! I'm saving that recipe for another occasion. (Need to get a grille wok as well to use with my RoadTrip XLE. Coleman might actually have one...)
