can i interchange 811 and 510 remotes ?

So, just like has been said all along, the 811 UHF Pro remote is not controlling other non-UHF Pro receivers.

So can a 508 remote control a 921 by RF? I seem to be able to make it work by IR but not UHF.

Not by RF, but it probably would via IR.

Would be nice if Dish provide a matrix for all own remotes and receivers like
