Yep, You put the jar cover on when the jar contents are hot, and it will vacuum seal the jar when the contents cool.

Works in reverse when you have a jar you can't open.

I've looked at a LOT of canning racks, and don't see this one or any quite like it. Too flimsy and no others fold flat. And small. Who does one at at a time?
