On the ultra it's home>setting>data reset.....from there you can delete all the channles or just the one sat.

For my AZBox Premium/Premium Plus, you go to the same menu HOME > SETTING > DATA RESET > DELETE SATELLITE CHANNELS.
Once this option is highlighted, when you press OK, it brings up the list of satellites in your receiver. Highlight the sats that you want to remove the channels from, press the CHECK button on the remote (the one with the paperclip icon) and it will check off that particular satellite. Select as many sats as you wish in this way. Then, when you press OK, the channels from all the selected (checked) satellites will be erased.
