I am trying to find out if I can install a new xKu LNB 60E (from Ontario) onto my 75E dish, currently setup in Mexico, and have it all functioning correctly

you can, it will work. but the signal strength will only be equal to a 60cm dish and in Mexico that may not be sufficient to get most of your programming.

Should work, if you already have your equipment setup and running with signal, etc, and you replace it,

Having already tried this I can tell you that it won't work well (especially that far South). If you have the $ buy the proper LNBF.
