Close due to high grill and air fry heat, we liked, very tender, forgot to add I brined with sea salt and put steaks into vacuum sealed bags before cooking.
3 lbs... I dropped temp to 132.5, for 5 hours, will go for 131 overnight then bump back to 132.5 or 133 till pull time... (my thoughts now at 9:40pm Mdt)
