Ever try a reverse sear?

Anyway, we just did a 24 roast but precooked most of the way with small potatoes and carrots. We do it again, I'll throw in some onions.

1 lb pitted cherries
2 tablespoons light brown sugar for 2 smaller jars
3 tablespoons of the sugar for the larger jar
Vodka to bottom of threads, in the bath at 132.5 for 3:15
Haven't tried this with cherries yet, but should work the same, won't have to repeat for a few months unless I get more jars and try Apple Pie "moonshine" with everclear.
If I didn't have a roast in the crockpot I would put a steak in the bath, same temp for medium rare...

So the major end product is the hootch, or the fruit?

Bath timed out 2 hours ago, pulled the pint jar 30 minutes ago, poured 50 ml into a chilled sampler bottle put in freezer, pretty good warm and cold.
Forgot to add 2 of the quart jars I added about a tablespoon of caramel syrup and the pint jar about a half.
Caught up for a few months and out of jars...
Sous Vide eliminates at least 3 weeks of aging if not more.
