Ever try a reverse sear?

Anyway, we just did a 24 roast but precooked most of the way with small potatoes and carrots. We do it again, I'll throw in some onions.

That's my plan this time, maybe vacuum seal some potato slices lower temp a little and sear also.

I read the reverse sear wrong, haven't tried that yet.
Pulled the roast salted then seared in cast iron pan @450F (bacon grease)about a minute each side and edges.
Tender, tasty made mashed potatoes with, dogs and the Mama liked also...

5 small mason jars
1 lb frozen (pitted) blueberries
Honey (maybe a table spoon each)
Vodka to 1" below lid
132F for 2:45 then left in bath a couple more
Dangerously tasty...
Beats 2 weeks at least of room temp.

About to do almost the same with cherry's using brown sugar, all the honey was almost solidified but comparing the 7 month old vs latest both are good, just different.

1 lb pitted cherries
2 tablespoons light brown sugar for 2 smaller jars
3 tablespoons of the sugar for the larger jar
Vodka to bottom of threads, in the bath at 132.5 for 3:15
Haven't tried this with cherries yet, but should work the same, won't have to repeat for a few months unless I get more jars and try Apple Pie "moonshine" with everclear.
If I didn't have a roast in the crockpot I would put a steak in the bath, same temp for medium rare...

In HS, I dated a girl whose daddy made cherry bounce. Loved it. She refused to learn and he tossed it all.

Cherry came out good, jars had less cherries, more alcohol than previous batch's, perhaps more sugar also but all in all good... will let age.

4 quart jars, 1 pint jar
20 oz apple pie filling
750 L Fire Ball
1/4 gallon apple juice
2 cinnamon sticks per jar
2 tbs light brown sugar
topped off with 40 proof Vodka (out of Everclear)
132.5 for 3 hours
Will let sit in bath for a couple hours or so before removing.

Bath timed out 2 hours ago, pulled the pint jar 30 minutes ago, poured 50 ml into a chilled sampler bottle put in freezer, pretty good warm and cold.
Forgot to add 2 of the quart jars I added about a tablespoon of caramel syrup and the pint jar about a half.
Caught up for a few months and out of jars...
Sous Vide eliminates at least 3 weeks of aging if not more.

Came out ok, would have mellowed with age I think, topped off the Deep Eddy bottle with... Add a little sugar and it might be dangerous.

2 Chuck steaks in, set for 2:15 so should be ready to sear in butter around 12:30.
