We have a Breakfast and Dinner thread so... :)
Continuing from the Breakfast thread, found Cornbread mix so ...
Yellow Cornbread Mix
2 Hatch Green Chiles -diced
1 Egg
2/3 cup of milk
add to greased pan
Bake for 400f 20-25 minutes(From instructions)
now to put together and try... this to go with pinto beans...

Just realized you left the recipe I will have to write this down.
 
I may have to make me some corn bread for supper.

Sausage, Hamburger & Gravy

Sausage (abput 2 patties worth)
2/3's of a lb. of lean Hamburger
brown above, remove meat add flour for gravy and brown...adding salt and pepper if wanted, add milk...
mix the meat in when gravy is just about ready...
 
2 Chicken Breasts (individually wrapped)
Low Sodium Bacon
My Rub
Country Crock Margarine
Placed in foil with a half strip of bacon on top and bottom applied rub on both sides and a about a half teaspoon of Country Crock margarine on top and bottom, wrapped and sealed them placed on grill on Medium heat...
 
Green Chile Mushroom Chicken Enchilada's:

1 - 15 oz. Can Cambells Mushroom Soup
1 - 7 oz. Can Chunky Mushrooms
3 - Skinless Chicken Breasts
1 - Large Potato sliced long-ways
2 - Strips low sodium Bacon
2 -2 Hatch Green Chiles diced
Corn Tortilla's
Cheddar Cheese
1 - Large Egg

Cooked 3 Chicken Breasts overnight in a small Crock Pot with sliced Potato in the bottom and the bacon on top of the chicken, topped with Chiles, Mushrooms and Mushroom Soup... Shredded meat and mixed everything together.
Heated Canola oil and put the tortillas in for about 15 seconds on each side and placed on paper towels, grated cheese and layered in a pie pan (2) then put in oven at 350 for about 5 minutes... fried a egg over easy and placed on top...
 
Red / Green Chile Enchiladas:

2 - Hatch Green Chiles
1 - lb. Lean Ground Beef
1 - 7 oz. Can Herdez Salsa Casera (hot)
1 - 7 0z. Can Red Chile Tomato Sauce
Corn Tortillas
Cheddar Cheese
1 - Large Egg

Diced Green Chiles and add to Ground Beef and brown
Grate Cheese
Simmer Tomato Sauce / Salsa mix
Fry Egg over easy
Dip tortillas in the Sauce and place one in pie pan pour layer of meat over & cheese if wanted, repeat and place in pre-heated oven till cheese is melted the pull and put egg on top...
 
for work today i made some chicken leg quarters with black beans. nothing complicated.
 
With the grill buried under a foot of snow, I pulled out the old George Foreman Grill and prepared us a batch of cheeseburgers...

...and a salad. ;)
