Sounds like the same thing I went through with my hughesnet dish. While I was trying to align it, I was pushing on the very left side of the dish, which caused the dish to change shape a tiny bit (trying to turn it right by pushing on the very left side caused the dish to do this) and BAM! I got a good Q signal. when I would let go of the dish and it would go back to it's original shape, the Q would drop down to 0-10. I took that dish down, put up a composite dish, which was less likely to be warped b/c it isn't metal, and it took me about 20-30 mins to find a good Q signal on both 97W and 123W. The new dish may be just what you need.
:EDIT:
I use a Viewsat Ultra Lite, which is basically the same as your Ultra. Your settings sound good. I don't know where you are in the southwest, but I'm in Oklahoma and the TP at 11805 comes in the strongest for me on 123W. On 097W, a ton of TP's come in strong. The list doesn't list this as a strong TP, but on 123W I get the strongest Q on either 12105 or 12108 (I can't remember which, I'll check when I get home today).
