I read on the Directv website that you could get 5.1 Dolby Surround Sound through the DVR receiver. I am not interested in the DVR part, I just want to be able to get surround sound for shows that have it. If I got the DVR receiver, but didn't pay the monthly fee, would I be able to still get surround sound? If not, what could I use?
 
You don't even need the DVR to get the 5.1 sound. D*'s receivers have supported 5.1 sound via optical output for years.
 
The only problem is, my receiver has no audio optical output. I have just the very basic one so I was going to upgrade it to get SS.
 
Well then no need to upgrade to a DVR if you won't ever use it. I had a standard DirecTV receiver that did 5.1 surround 5 years ago.
