Currently have:
1 - 925 connected to 4 tvs. Turner 1 to living, turner 2 den, 2 bedrooms
1 - 625 connected to 1 tv
1 - 625 connected to 2 tvs

Could I get a hopper/Joey setup with this? If so, how? 2 hoppers/5 joeys? Would it be worth it to switch?
 
I think the way to look at it is by the number of potential views on a regular basis. I would go with the following, 3 tuner/Hopper and fill out with Joeys to meet the number of locations.

1 person = 3 tuners
2 people = 6 tuners
3 people = 6 tuners
4 people = 6 tuners lending towards 9
5 people = 9 tuners

1 - 625 connected to 1 tv -> 1 Joey (or 1 Hopper depending on the number of simultaneous tuners you want at that tv)
1 - 625 connected to 2 tvs -> 1 Hopper to 1st TV, 1 Joey to 2nd

Total 2 Hoppers, 3 Joeys, 1 RF modulator, $38/month equip fees.

To serve all TV's independently (no sharing like you do today), you'd need 2 Hoppers and 5 Joeys as you said, $52/month.
To duplicate exactly what you have today, see above.
 
You can buy a 5th Joey for $99. You could also move up to 3 Hoppers but that would run you a minimum of $350 - $400. At that point you need additional switches and an extra node.
