I am setting up a different dish, and I don't know how to set up lnb. On the lnb there is 3 coax hooks labeled 1,2 and lnb in. What goes to each of these? I have the separator on the back of the receiver so I only have to run one line to it. Also, any pointers on pointing the dish would be much appreciated. Thanks!

1 or 2 can go to a receiver (or in your case the separator)
LNB in is to add a wing dish (like 61.5, 129 etc) so you could get 3 satellites with no external switch

Port 1 is for 1 receiver, port 2 is for a second receiver and "LBN in" is for adding another dish pointing at a different satellite.
On the point dish menu screen, what do I set The tuner input to, 1 or 2? What transponder should I select, it seems to keep going back to transponder 19 on its own when I go back to the point dish screen
