I run a dual band router. Does it matter, for the hopper and Joey, if it's connected to 2.4GHz or 5.0GHz?
Would 5.0GHz be better, or for the hopper/joey doesn't it matter?

It does not matter if you connect to the 2.4GHz or the 5GHz radio. They both have their advantages and disadvantages. The 5Ghz band usually has a lot less interference (because most people use the 2.4 band) however, the 2.4Ghz radio usually will have better range due to the lower frequency. At my house, I use the 5GHz band strictly for video because there is no interference when someone else is the house is using the internet on the 2.4 band, and the 5Ghz signal is very strong because it only has to go thru one wall and is only 30 feet away from the router.
