I've got a FTA setup...now what can I pick up?

Lately, this question has come up a lot....

What can I get Free to Air? I have a 30" dish and I want to get "X" channel. Can I get it? Some of us have linked them to the Lyngsat site, which is a good site. However, for newbies it can get confusing what they can get.
I will answer the 3 biggest questions...

What can I get with an 18" dish?
