You could do that, Hopper3 and Joeys in a utility closet with HDMI cables from each receiver to the TV locations. There would probably be some restrictions on copper HDMI lengths though. There are fiber HDMI cables available for longer distances. The biggest issue I see is the remotes at the TV locations. I just tested my 54 remotes for different receivers. I went about 60' away from the receivers going through several walls and I could control the married receivers from that distance. YMMV in different circumstances. There are extenders available for those kinds of issues.
