I'll be doing similar. Buttermilk biscuits, 2 they are small, with sausage gravy, lot's of sausage in this gravy, and 2 eggs sunny side up...

New Mexico Benedict - Toasted English muffin topped with slow-roasted pork carnitas, two poached eggs, covered in red and green chile sauce. Garnished with cheddar jack cheese and a side of hash browns. Coffee.

I had the big biscuit , not as much sausage in gravy but it was good... (btw homemade sausage with green chile added)

Diced green chile/sharp cheddar cheese/fresh grated hash brown cooked below bacon and sausage in air fryer and topped with 2 eggs over easy... OJ

Two eggs over easy, refried beans, green chile sauce and a tortilla with butter. Coffee.

2 tablespoons mashed potatoes mixed with 2 tablespoons diced green chilies, scrambled with 2 eggs… Bacon, sausage, OJ.

Mixed egg, put in medium heat disc topped with sharp cheddar cheese and a small flour tortilla. Flipped after minute or so and cooked till tortilla was brown, topped with diced green chile & cheese hash browns. (made 2) Bacon, sausage & OJ...

Not breakfast yet. This eill be cubed up for the french toast bake tomorrow. It over rose a little, hence the saggy shape up top. The dough is real soft.

Mixed egg, put in medium heat disc topped with sharp cheddar cheese and a corn tortilla.(warmed 2 tortillas in baggie with damp paper towel for 30 seconds in microwave) Flipped after minute or so and cooked about a minute, topped with cheese and short french fries.
Added green chile to the disc, roasted for a minute and repeated with egg and cheese. (made 2) Bacon, sausage & OJ...

Mixed egg, put in medium heat disc on top of diced sausage patty, topped with sharp cheddar cheese and a small flour tortilla. Kept weight on, pulled, topped with cheese and a slice of bacon and ate like a taco... (x2, 2nd one I spread queso on the tortilla before topping) OJ
