My version of a pileup. Mound of home fries, onion, chopped bacon, chopped Hatch green chile mixed in, cheddar cheese, topped with an over easy egg and served with a warm tortilla. Strong black coffee and water.

Quartered a small gold potato, ground with a homemade sausage link and cooked in air fryer under 2 strips of thick bacon, mixed with scrambled eggs once both cooked. Milk - tasty.
