I like tacos, can eat corn bread every now and then, but I'm having trouble imagining what they would taste like jammed into a casserole dish...

It was actually pretty good. Might use less of the cornbread mix next time though.

Tonight I tried making King Ranch Casserole. My sister wanted me to try to make it. She saw it on Diners, Drive-Ins and Dives. She made me watch the episode, take down all the ingredients and wanted me to figure out the correct amounts for everything. She looked it up online, but couldn't find what she thought she wanted. So, I experimented tonight. HIFI mostly liked it, except for the celery and corn tortillas. I made half chicken and half with beef stew meat because I knew HIFI wouldn't like the chicken. It was pretty dang good if I do say so myself. Yay me!

Yep, I'm not a big fan. In fact, I'll take taco corn bread casserole over a tamale without even sampling it.

Stir-fry vegetables on rice and grilled salmon. I made fresh-squeezed lemon-limeaid. I use very little sugar since I find most lemonaid has 80-90% too much sugar as is way too sweet.
