Browned a pound of lean ground beef then simmered in "El Pato" a jalapeno based salsa/enchilada sauce, then served in a bowl layered with thin tortilla chips and a little queso.

Ice Cream if snacks count ... I was still full from lunch so wasn't hungry.

Made a chuck roast, wow was it good.

Monday night supper ... Taco salad (ground beef, pinto beans, tortilla chips queso & salad).

I splurged.......I have a standing rib roast in the oven.:

Stir frying skinless split breasts mixed with diced onion, hatch green chiles & sliced mushrooms with rub and crushed red chile... fajitas.

I made beef and chicken enchiladas for my sister to take home for supper, and I made tostadas for my family.

A double slice of carrot cake. What the hell, if I'm gonna die the day after tomorrow I might as well die happy!

It was a varied assortment of things. Went to a wedding so you know how receptions are...a bunch of pot luck.

Wood ducks and blue-winged teal roasting on garlic and red wine, with onions, peppers, and carrots. It'll be served with Paraduxx Canvasback, followed by Veuve Clicquot after Christmas Eve worship.
