I think I died and went to heaven. May I present, the sopapilla burger. You're gonna need a knife and fork for this one, I did. And a lot of napkins. Sopapilla stuffed with a juicy burger patty, guacamole, mayo, lettuce, tomato, onion, bacon and chopped Hatch green chile.

Pork chops, apple sauce with fresh ground cinnamon. Rice pilaf (from a box <shame>) mixed vegetables. Craft IPA.

NOTE: I made an extra pork chop so I can have a pork chop and eggs tomorrow or Thursday.

Pork schnitzel, baked apples, sauerkraut with bacon and Gurkensalat. Paulaner Helles.
Amazing, I also had pork schnitzel but with Bavarian fried potatos. I've had many a Paulaner Helles in my time. None in my refrigerator though but I do have some Andechs Doppelbock Dunkel in there. I decided to pass on that right now and decided to have a few Dark and Stormys a bit later. 😃

Big change in the weather. We went from high 90's and dry for months to 60's and pouring rain that we desperately need. Perfect weather for red chile meatloaf mashed potatoes and gravy with mixed vegetables. There may have been a beer or two involved.

Beef and vegetable stew with buttermilk biscuits. Water.
It seemed appropriate on an unusually cold and wet evening in New Mexico.

Smoked some salmon on the grill while enjoying some Blue Moon beer. Kinda cool tonight so I fired up the heaters. Here in FL, we fire up heaters once the temps get below 60 :cool As for the salmon, I seared them first, then flipped them off to the side not over the coals and brushed on some lemon pepper marinade followed by some salmon seasoning. Threw some hickory chips on the coals and then closed the vents to about 10% airflow. Yum.
