I guess Cham beat me to it. your polar star or north star will tell you if your mount is properly set for true south azimuth and polar elevation (not the dish or signal elevation). your latitude equals your polar elevation measured as lak7 picture(you do not have to substract). a common error that i also made at first is to read the inclinometer wrongly because depending how you put it is either 90-value or just the face value. declination is the difference between your latitude and the dish elevation or if you prefer the angle the sat signal is coming in.
