Hopper/Joey Setup Option

I currently have a 612 DVR, 2 x 211K, and a 4th TV which is mirrored off the 612. I just ordered a Hopper and two Joey setup to replace all the receivers. The person on the phone said I could still have a mirror setup with the Hopper.

Does this sound right?

You can, but it will take some extra effort. The Hopper and Joeys do not have a coax out. Assuming the mirrored TV is SD, you will need an RF modulator or run a composite cable.
