Is there any gadget out there that allows wireless transmission of the satellite signal? I imagine it would have the transmitter box near LNB and the receiver box at home, near the receiver..?

Not wireless nor in N.A. but I seem to remember something about a LAN based LNBF in E.U. Think it was Scott posting about it when at a E.U. show. That's what I remember anyway.

That's exactly why when you run wires/coax you should run EXTRA right away for spares. Especially if they are in a trench/buried. Extra coax is not very expensive compared to digging the trench up again to add wires later, and I can pretty much guarantee that you'll find a use for the extras fairly quickly as soon as you want to add a dish, add another lnb, maybe get a bad one, etc.

Most probably don't want to hear this but for buried cable it's better to put PVC pipe in the ground and pull the cables through that. That way you can replace anything you want without having to dig it up.
